Happy Thanksgiving to All!


As you might have guessed by my title, I had a great T-day!  I hope everyone else did also, but for those whom I know that didn’t, I am sorry for that and sorry you could not enjoy this day.

And what is it that made me so happy about T-day?  Well, first you have to understand that I have never been keen on cooking, not even making a sandwich.  I should have been born into a world where there is a food replicator in the walls (like in Star Trek) and I just say what I want and ‘poof” it just comes right out, perfect.  But alas, I have not been born into such a world.  This is why in my whole life, I have only ever made 2 previous T-day dinners.  Also, in general, other than the lack of desire to cook, I do get very easily overwhelmed and that in turn makes me extremely anxious, and well, tends to put me off of cooking even more than I already am naturally.

So, this was my 3rd T-day that I was cooking, and I planned quite a number of dishes:

  • turkey breast
  • gravy
  • cranberry sauce
  • biscuits
  • stuffing
  • mashed potatoes
  • sweet potatos with honey&lemon glaze
  • green bean casserole
  • scalloped corn
  • 2 chocolate pies
  • 2 pumpkin pies
  • 2 dozen chocolate/peanut butter no-bake cookies
  • orange jello with mandarin oranges in it

So, on Tuesday night, I made the pies and jello and cookies.  Then, Wednesday, I prepared the sweet potatos, green bean casserole and scalloped potatoes, so that I only needed to put them in the oven on Thursday.  Then, while all those were in the oven on Thursday along with the turkey, I went ahead and made the stuffing and potatos and gravy.  I had it planned so that everything would be ready at the same time, even!!  and it was!!  and we got stuffed, and still have leftovers today!  (the leftovers are mine, now, tho–the kids left to their dad’s for the rest of the weekend! )

So, today before the kiddos left, we put up our small Christmas tree, and decorated the apartment, too!  There is garland with birds, bells, pinecones and pointsettia leaves, and holly berries hanging over the windows, the entrance to the main room, and the door.  There is even a lighted wreath on the front door!!  The kids were so great and so good-natured, it was actually fun for once, without any sibling strife 🙂

It is just so pleasing, so very wonderful, to have had such a yummy, well-organized, festive dinner followed by lovely decorating 🙂  I can’t remember feeling so content, so peaceful on any other T-day, and I just wanted to share with all of you my wishes for a happy holiday season -no matter who you spend it with (or don’t spend it with), I just hope you may also find a happy, and even maybe, a festive place during this holiday season.  And for those who may be struggling, I hope you can find at least a little time in a happy place too.
